Surprise!
Yesterday the entire school was supposed to have the PTA sponsor a spring party in each classroom. My room mom had it all planned out and when they walked in they said, "It's not a spring party, it's a baby shower!" Then the kiddies cheered and starting pulling out their secretly stashed baby gifts. It was SO fun! This is the first one I've had - I told the kids this is a monumental moment in a girl's life! I have LOTS of girls in my class, so there was no shortage of "oohs" and "ahhs" and "ca-uuuute!" The moms had fun games for the kids and lots donated to the group gift (see diaper cake picture with lots of goodies and a wad of cash).

Cafe Rio
There are several Cafe Rio-type recipes online, but I made this last week for my family and it was pretty darn close. It takes a little effort, but is well worth it. And it's way more cost effective!
Lime Rice
Saute:
2 T. butter
1 yellow onion, chopped
4 cloves garlic, minced
In a large pot, bring to a boil the following:
6 2/3 c. water
8 t chicken boullion
1/2 bunch cilantro, chopped
2 t ground cumin
2 small cans diced green chiles
1 T lime juice
1/2 t salt
Add onion and garlic to boiling water.
Add 3 c. long grain rice. Reduce heat and simmer 30 minutes.
Picode Gallo
4 fresh tomatoes, chopped
1 white onion, chopped
1 1/2 bunch cilantro, chopped
2 cloves garlic, minced
1/2 t lime juice
1/2 t salt
1/2 t pepper
Combine all ingredients together in medium size bowl.
Tomatillo Dressing
1 pkg. buttermilk ranch dressing mix
1 c buttermilk
1 c mayo
2 small tomatillo
1 clove garlic, minced
1/2 bunch cilantro
1/2 t lime juice
1 small jalapeno (seeds removed)
Blend in blender. Add addtional mayo if dressing is too thin.
Cafe Rio Pork
3-4 lbs. pork loin
2 c brown sugar
2 bottles red taco sauce
2 T cumin
2 cans (24 oz) Coke
Cook pork on low in crock pot with above ingredients for 12 hours or overnight. Shred pork.

Teacher Appreciation
You teacher friends will appreciate this, but I just had to take a picture of my cute door this year. My room mom is unbelievable - totally over-the-top and so fun. I think I will miss being appreciated for a whole week - lunches every day, gift cards, cute notes, etc. To be honest, it makes me feel a whole lotta spoiled!

Things I feel good about
This weekend I felt especially good about two things (besides the warm fuzzies of Easter Sunday, of course!)
1. My tulips are sprouting! I was excited enough to take a picture. This means the end of a LONG and FREEZING COLD Utah winter and the arrival of spring and a few weeks with my favorite little flower.
2. We finally finished the sanding stages of our crib. This is good because we've been doing it for a month - maybe two? Now Brian has to seal, stain, and polyurithane all of it. We'll have a nursery here soon enough!

Happy 28th Brian!
Just a random photo I took of Brian last week as he was passing me in front of the TV. I sure love this boy. All he needed for his birthday was a new pair of flip-flops to get ready for the summer. And I bought him Pringles, shrimp, and cookies and cream ice cream. Just because I'm nice.
And...28 reasons why I love this guy (in no particular order):
1. He makes me laugh every day.
2. He has gorgeous eyes.
3. He helps do the laundry every week, if not just doing it all by himself.
4. He always asks what he can do for me.
5. He is great at what he does. He is a counselor and makes a difference in kids' lives every day.
6. He makes friends with strangers. He is so easy to talk to.
7. He loves his family.
8. He trains our dog, Wilson. And brushes him. And cleans up his poop. I don't think I've done that even once.
9. He is excited to be a dad.
10. He serves other people. He's always finding ways to help friends, family, and neighbors.
11. He looks super cute with his hat on backwards. I love that!
12. He is a little OCD. Okay, a lot. He likes things to be clean and that is very helpful for me, who is not naturally that way.
13. He thinks of all of the possibilities before making a decision. This is also unlike me, who is somewhat irrational at times.
14. He is great at saving us money.
15. He has big plans for the future. And a lot of that involves working less and being home more. I feel good about that.
16. He has an incredible voice.
17. He is very talented. He can play the piano any song on the piano after he hears it just once.
18. He write me songs for important occasions. He wrote me a song when we got engaged. And for the past two Valentine's he has serenaded me in front of my 5th graders. How cute is that?
19. He appreciates good smells.
20. He is more faithful at reading his scriptures than I am. And he prays with me every day.
21. He thinks I'm cute, even when I'm pregnant, or not wearing makeup, or just waking up in the morning.
22. He's good at talking about how he feels.
23. He is brave. He has been through more than most 28-year-olds I know and has been a champ the entire time.
24. He knows that there is more to life than money.
25. He loves to be outside. He is more happy mowing a lawn, fixing flower beds, building rock walls, and other outside things than most people I know. He can't wait to use the weed whacker I bought him for Christmas.
26. He wants to be healthy. He loves watching The Biggest Loser with me.
27. He practices naming things (dogs, children) by yelling out the name out loud to see how it will sound in different situations. You may have to be here for this, but it's hysterical.
28. He treats me like I'm the most important person in his world. And he's mine. And that is how it should be.

Pregnant Nat
Well, here I am last Sunday, in all my glory. The bump may still be considered "cute" at this stage, but I have a feeling it's going to get really ugly really fast. So we'll go with it for now. Like Brian says, "Embrace it!"

Late
Yesterday I had to laugh out loud at myself. I think that's probably an okay, healthy thing to do.
So I had a headache and Brian was staying home sick from church. I left for church about 10 minutes after it had started, thinking I'd be about 15 minutes late. I walked in and there were three other families in the foyer. I heard singing in the chapel and asked, "Is that the sacrament song?" They said it was and it was about over. So I quickly snuck into the back row and had a seat. I had been sitting for about 30 seconds when a lady went up and started praying. I was thinking, "Gosh, they are JUST getting to the opening prayer?" And I thought I was behind schedule! Anyway, she prays and then suddenly everyone stands up and starts gathering their things, moving out of the chapel. My neighbors were right in front of me and I said, "I think I'm having a pregnant moment here...but doesn't our church start at 10:30 or did they change it to 10:00?" They looked at me funny and reminded me that today was Daylight Savings. Oops. As my mom would say - "Cute but dumb!"
I still can't figure out this Utah time change thing. You'd think after ten years I'd have a clue. Sad to say, this isn't the first time I've done it. Only then I was an hour EARLY to everything and couldn't figure out where everyone was!
